I finally tasted it this evening(12 days later) t, and it’s *really* good! I was quite worried about the proportions and seasonings, since I was ad libbing in many ways… but it seems to have worked out. I’m glad I included the pear and carrot, since they definitely added a nice subtle sweet element to the overall flavor. Now I’ve just got to figure out what to do with 2.5-3 quarts of kimchi.

Homemade kimchi is wonderful! You can use different vegetables and sugars and control the heat (I like mine pretty hot).
